3 gallon Green Chile Sauce Instructions: Caution: This product must be cooked and is not ready to eat. Do not add contents to boiling water. Add 3 gallons of COLD water to a 24 quart pot. Stir in the contents of bag. Bring to a rolling boil. Cover and simmer gently for 10 to 15 minutes stirring occasionally. Pay close attention to ensure that the contents do not scorch. Thicken if desired by mixing 1.5 cups of corn starch in 1 quart of of cold water. Stir to remove lumps. Stir into simmering sauce and continue to stir while returning the sauce to a full boil. Boil for 2 minutes. Remove from heat and serve! Refrigerate or freeze unused product after preparation.
